Is it me, or are there just a ton of birthdays in May? Maybe I notice it more because my own birthday falls in May, but according to Facebook, 68 of my friends have birthdays this month, including my husband and sister-in-law.
It turns out this is also the third birthday of Being Geek Chic. A huge thanks to all of our readers who have been with Liz from the start, making this the vibrant and exciting community that it’s become.
And so in honor of my birthday, BGC’s birthday, and my 68 friends throughout the month, we’re bringing you a sweet way to celebrate.
RECIPE: Being Geek Chic Rainbow Birthday Cupcakes
NOTES: I prefer gel food colors better than liquid and the measurements are based on using a gel. I used a small-size cookie scoop for the cake batter but you could use a tablespoon-sized measuring spoon. These measurements are based on a Jumbo Pan . If you use a regular sized cupcake pan, you should use a teaspoon or limit to only three colors of batter.

1) Preheat the oven to 350 degrees F and line a jumbo cupcake pan with paper liners.
2) Sift together flour, sugar, baking soda and orange zest.
3) In the bowl of a stand mixer, mix eggs, oil, buttermilk, vinegar and vanilla until completely combined.
4) Add the dry ingredients into the wet in three batches with mixer on low. Mix until just combined.
5) Split the batter evenly among six bowls (you’ll be able to fit about 1 1/2 cups in each).
6) Drop a pea sized amount of colored gel in each bowl and mix until no white streaks are left.
7) Using the cookie scoop, drop about one tablespoon (or one scoop) of each color into the cupcake tins. I started with purple at the bottom, then worked backwards to red. The cupcake tins should be about two-thirds full.
8) Bake the cupcakes for about 28-30 minutes (If you’re using regular-sized cupcakes, bake for about 24-26 minutes).
9) While the cupcakes are baking, make your vanilla buttercream. Cream the butter until it expands and becomes fluffy, about 5 minutes.
10) Add the powdered sugar a half cup at a time until the buttercream is fluffy does not taste grainy. You may not need all of the powdered sugar.
11) Add the vanilla last and mix until combined.
12) Once the cupcakes have cooled, pipe the frosting onto the cupcakes and garnish with rainbow sprinkles.
